预糊化淀粉与变性淀粉的区别

预糊化淀粉是一[1]种加工简单，用途广泛的变性淀粉，应用时只要用冷水调成糊，免除了加热糊化的麻烦。广泛应用于医药、食品、化妆品、饲料、石油钻井、金属铸造、纺织、造纸等很多行业。
变性淀粉的分类一般是根据处理方式来进行。加工精白淀粉，必须选用淀粉含量高的白薯品种。经加工后的淀粉虽选用了天然原料,但经人为加工, 改性淀粉，也就不可能算是天然的了。食用类的专用变性淀粉是不会对身体有副作用的。
预糊化淀粉是物理变性，属食品原料；改性淀粉通常指化学变性，就是通常说的变性淀粉，是化学变性，属于食品添加剂。
各种原淀粉经物理或化学处理使其性能或功能发生改变后的淀粉统称为变性淀粉或改性淀粉，预糊化淀粉是改性淀粉的一种，原淀粉经高温处理发生糊化，这种淀粉在冷水中即可成糊。
